With two different textured sides, you can prepare your meat just the way you like it best. Use the side with the fine structure to gently flatten your meat. Use the side with the rough structure to tenderize your meat by roughening the surface. Simply place your cut of meat between two layers of clingfilm and pound it evenly, beginning from the centre and working your way to the outside.
