Baked Chicken with Tomatoes and Olives

Serving size for 6 to 8. 

 

Ingredients

  • 1 Tbsp olive oil
  • 4 chicken thighs
  • 4 chicken legs
  • 5 cloves of garlic
  • 5 anchovies
  • 1 jar of tomato puree (passata)
  • 1 cup of red wine
  • ½ bunch of thyme
  • 2 bay leaves
  • 2 Tbsp lemon zest
  • 300g cherry tomatoes
  • 1 cup mixed olives

Directions

  1. In a French oven on medium heat, add olive oil. Sear chicken on all sides, until skin is crispy and brown.
  2. Add the garlic and anchovies, cook for another 2 minutes.
  3. Add remaining ingredients and place in pre-heated 355F oven and bake for 45 minutes or until chicken is cooked through.
