CITRUS MARINADES!

Stop stressing over the marinade you're going to use with dinner tonight. Don't labour over finding the right recipe. Don't get caught in long lines at the store shopping for the ingredients. And when you're finally getting started with the preparation, get creative, not rigid with the ingredients. Just simplify the whole process and enjoy it. Any marinade that's worth serving doesn't need hours of your time spent on it.

With just 30 minutes in the kitchen and using one of our six recipes, you'll be able to to create the perfect marinade from start to finish. Your food will be dripping in unbelievable flavour using common ingredients that can be a quick pick up at any grocery or produce shop, or that you probably already have sitting around at home.

Almost all marinades (including ours down below) will follow the same basic principles. Simply combine a 1/2 cup of some oil or other liquid, a 1/4 cup acid (citrus, vinegar or mustard) and a variety of herbs and seasonings. Our recipes have ingredients that will make enough marinade to cover about 2 lbs of meat or fish.

So go ahead and take a look at our suggestions and find a flavour profile that suits your mood or main course. But please use your imagination with these recipes. Have fun with them and you'll be able to create something wholly unique to serve on your dinner table!

 

 

1) Mediterranean:

  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 cup plain yogurt (any fat content)
  • 3 TBSP dried mint
  • 2 cloves garlic minced
  • S&P

2) Greek:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2-3 TBSP dried oregano
  • 2 cloves garlic minced
  • 1/4 red onion grated or finely diced
  • S&P

 

3) Asian:

  • 1/2 cup canola (or other vegetable) oil
  • 1/4 cup rice wine vinegar
  • 2-3 TBSP soy sauce
  • 1/2 inch fresh ginger grated
  • 1 clove garlic minced


4) Mustard:

  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 3 TBSP Dijon mustard
  • 1 shallot minced
  • S&P


5) Balsamic Coffee:

  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar (espresso flavoured balsamic is a thing! but if not in your neighbourhood then…)
  • 1 shot espresso or 1/4 cup very strong coffee
  • S&P

6) Citrus:

  • 1/2 cup olive oil
  • juice & zest from 1 orange, lemon & lime
  • handful of parsley chopped
  • 1 medium Vidalia onion or other sweet onion finely sliced
  • S&P
